The Original

Smoked sausage with mild chillies fresh herbs and cheddar cheese. I wanted a sausage that delivered on the promise of oozy gooey cheese that melted in your mouth and has the surprising flavors of fresh herbs to give it depth. Pairs great with sweet and sour pickled peppers.

Details and Preparation

Broil, BBQ, pan fry or bake 10-12 minutes over medium heat, turning occasionally. After opening package, use within 3 days or freeze.

The Über-Wich


The Über-wich - Serves 4

A great way to experience the deliciously melty goodness that is the real cheddar cheese oozing in every bite. The flavors are so well balanced by sweet and sour pickled peppers and slightly bitter arugula in this great sandwich.

  • 1/2c white vinegar
  • 1/2c sugar
  • 2 garlic cloves sliced lengthwise
  • 1 Red bell pepper sliced in long strips about 1/4 inch thick
  • 4 Über Käse cheddar wurst sausages
  • 2c baby arugula
  • 2T extra virgin olive oil
  • salt and pepper
  • 1/4c whole grain or dijon mustard (optional)
  • 1/4c mayonnaise(optional)
  • 4 sandwich buns or french baguette cut into sausage lengths, lightly toasted

In a medium sauce pan bring vinegar, sugar, and garlic to a boil. Reduce heat to low and allow to simmer 10 minutes.

Add red bell peppers and remove from heat. Keep peppers submerged in pickling liquid in refrigerator for at least 20 minutes. (The recipe for these pickles can be multiplied according to desire and will keep, covered for up to one month.)

Pan fry or grill sausages according to package directions

In a medium mixing bowl toss arugula with olive oil and season with salt and pepper(fresh ground is best) spread one side of bun with mustard and the other with mayonnaise, place sausage in bun and top with dressed arugula and pickled red peppers.
